| 2 | 脱脂糯小米米糠粉对面团流变学性质及馒头品质的影响显示文摘对比两种不同目数脱脂糯小米米糠粉(简称米糠粉)对面团流变学性质的影响;采用感官评价和质构分析相结合评价其对馒头品质的影响,确定其最适添加量。结果表明:两种粒度米糠粉在添加量为6%(质量分数,下同)以下时,对面团的粉质特性均有一定的改良作用。两种米糠粉的添加对面团的拉伸特性都有一定的恶化作用,但100~200目米糠粉添加量为4%~6%和过400目米糠粉添加量为6%~8%时,面团的拉伸特性恶化不明显。随着100~200目米糠粉添加量的增加,馒头的白度值逐渐减小;添加量为4%~6%时馒头的硬度、弹性、咀嚼性和回复性都较好,且感官评价得分较高。过400目米糠粉的添加对馒头的白度值影响相对较小,其添加量小于6%时馒头质构性质较好,且感官评价得分高于100~200目米糠粉。综上所述,添加适量的米糠粉可以在一定程度上延缓馒头老化,100~200目米糠粉的添加量应控制在4%~6%,过400目米糠粉添加量应控制在6%~8%。 | 邓利 Kizzy Nerissa Kira Ereia RENNIE 梁叶星 钟耕 | 2015 | 食品科学2015，36，7： | 13 |
| 3 | Fully-coupled simulations of thermally-induced cracking in pegmatite due to microwave irradiation显示文摘Fully-coupled thermo-mechanical simulations are implemented in COMSOL Multiphysics to investigate micro-scale stress-strain variability in pegmatite specimens subjected to thermal loading using microwaves. Thermally-induced compressive and tensile stresses increase as the microwave irradiation duration increases. The dielectric constant, coefficient of expansion, and type and size of mineralogical boundary have significant impacts on the responses of the rock to microwave irradiation. The maximum principal stress of the chlorite is the smallest, indicating that the chlorite experiences the most damage under microwave irradiation, followed by the quartz. The maximum principal stress values of plagioclase and orthoclase are larger, indicating that they are likely to incur the least damage. Where quartz or chlorite is dominant, the resulting von Mises stresses are consistently higher after 120 s of microwave irradiation. The rate of generation of von Mises stresses increases most rapidly along the interface between quartz and plagioclase, and the interface between quartz and orthoclase, followed by the interface between quartz and chlorite, and finally the interface between plagioclase and orthoclase. | 7 | Prediction of rock brittleness using nondestructive methods for hard rock tunneling显示文摘The material and elastic properties of rocks are utilized for predicting and evaluating hard rock brittleness using artificial neural networks(ANN). Herein hard rock brittleness is defined using Yagiz'method. A predictive model is developed using a comprehensive database compiled from 30 years' worth of rock tests at the Earth Mechanics Institute(EMI), Colorado School of Mines. The model is sensitive to density, elastic properties, and P- and S-wave velocities. The results show that the model is a better predictor of rock brittleness than conventional destructive strength-test based models and multiple regression techniques. | 9 | New artificial neural networks for true triaxial stress state analysis and demonstration of intermediate principal stress effects on intact rock strength显示文摘Simulations are conducted using five new artificial neural networks developed herein to demonstrate and investigate the behavior of rock material under polyaxial loading. The effects of the intermediate principal stress on the intact rock strength are investigated and compared with laboratory results from the literature. To normalize differences in laboratory testing conditions, the stress state is used as the objective parameter in the artificial neural network model predictions. The variations of major principal stress of rock material with intermediate principal stress, minor principal stress and stress state are investigated. The artificial neural network simulations show that for the rock types examined, none were independent of intermediate principal stress effects. In addition, the results of the artificial neural network models, in general agreement with observations made by others, show(a) a general trend of strength increasing and reaching a peak at some intermediate stress state factor, followed by a decline in strength for most rock types;(b) a post-peak strength behavior dependent on the minor principal stress,with respect to rock type;(c) sensitivity to the stress state, and to the interaction between the stress state and uniaxial compressive strength of the test data by the artificial neural networks models(two-way analysis of variance; 95% confidence interval).
